My ‘base’ recipe is attached. To pack as much coconut flavour as I could in these, I used 3/4 cup coconut flour, 1 cup spelt flour, 3 eggs, 2 cups of coconut milk, and 3/4 cup shredded coconut. Coconut flour is really dry, so I had to play around with the liquid contents in the recipe (hence the addition of egg, and additional cup of coconut milk).
Served with greek yogurt, raspberries, and maple flavoured bacon ♥
